Why can gelatin be widely used in candy
Gelatin has the function of absorbing water and supporting. 明膠在糖果中的一般加量為5%~10%。在晶花軟糖中明膠用量6%時(shí)效果最好。在橡皮糖中明膠的加量為6.17%。在牛軋?zhí)侵袨?.16%~3%或更多些。在糖果粘液的濃糖漿中加量為1.15%~9%。糖味錠劑或棗子糖果的配料要求含明膠2%~7%。在糖果生產(chǎn)中,使用明膠較淀粉、瓊脂更富有彈性、韌性和透明性,特別是生產(chǎn)彈性充足、形態(tài)飽滿的軟糖、奶糖時(shí),需要凝膠強(qiáng)度大的優(yōu)質(zhì)明膠。
